Southwest Vegetarian Quinoa

Another fun recipe for you all, shared by Brooke D. This recipe is originally from Haley at Simply Scrumptious! Thank you Brooke for sharing this as well as sharing your modifications (:  





 Southwestern Vegetarian Quinoa
Serves 4

Ingredients:
1 Cup Red Quinoa (My Modification: I just used regular quinoa because that's all I could find)
2 - 3 Heirloom Tomatoes chopped (My modification: I used roma tomatoes) 
2 Ears of Corn (I used 2 cans of corn)
1/4 Red Onion diced into 1/4" x 1/4" squares about
1 Can Black Beans - drained and rinsed
1 Avocado chopped
1 Jalepeno - seeds removed and diced small (I eliminated this because I didn't want heat) 
1/2 Cup chopped Cilantro (I used 1 cup because I love cilantro)
2 Garlic Cloves - chopped
Olive Oil (I used sunflower oil because I'm trying to cut back on certain oils)
Salt 
Pepper

Dressing:
Juice from 2 Limes
2 tsp Cumin
1 tsp Chili Powder
2 Tbsp Red Wine Vinegar
2 Tbsp Olive Oil
Salt
Pepper

Directions:
Combine 1 cup red quinoa with 2 cups water in a saucepan.  Bring to a boil.  Reduce heat to low, cover, and simmer for 15 minutes until all the water is absorbed.  Saute corn, garlic, black beans and jalepeno with olive oil and salt/pepper over medium high heat for about 5 minutes.    Remove from heat and place in a large mixing bowl.  Add chopped tomatoes, onion, avocado, and cilantro.  Whisk dressing ingredients together.  Add quinoa and dressing to the vegetables and mix together.  Season to taste with salt and pepper.   
 
This has turned out to be one of my favorite, hearty, healthy recipes! The quinoa makes it pretty filling, so I usually have this as a side with fish or I just have two bowls by itself if I'm starving and that's all I'm going to eat. Surprisingly, it sat well, too. I was able to eat off this refrigerated for about 3 days. It was a little soggy, but kept its flavor!
